Their dishes are all prepared seasonally, in a thoughtful way that spotlights foods that are in season and growing naturally in our area of country. Crimson Door Cafe (formerly known as Crimson Hearth) has always been their dream restaurant. It’s Rick and Kaston’s wish to make fresh and delicious dishes from scratch and to create an inviting dining experience.
Connery has been in the food service industry since his teen years. He moved from Florida to Montana with his family in 2018 to work as sommelier at the Yellowstone Club private club and resort in Big Sky, Montana. A year later, he moved to Coeur d’Alene to manage the food and beverage program at the Gozzer Ranch Golf & Lake Club.

HOB is complete with a full espresso bar including craft lattes, cold-pressed juices, smoothies, and wellness shots available for quick counter service or in-house dining. In addition, HOB has an extensive sommelier-picked sparkling wine list, local craft beers on draft, and a playful cocktail menu. Crimson is an extension of the Pedersen’s home and they’re excited to welcome you in. The idea for House of Brunch was born from a brunch Connery and his family had while on vacation at his mother’s house in his home state of Florida. Connery had caught fresh crab that was made into beignets, deep-fried pastries, and the family opened a bottle of champagne to enjoy with the meal. Topped with tiny dollops of whipped goat cheese and locally sourced honey, the waffle is sweet, salty, creamy and crunchy. These lighter toppings also mean it'll never get soggy. Aiming to highlight only the best aspects of the breakfast-plus-lunch meal is House of Brunch, newly opened in the heart of downtown Spokane.

Connery and Executive Chef Wade Watkins have joined forces to create a unique menu. "We're trying to bring that hospitality and attention to detail that you see in a private club world, and bring it to the public and show people what real hospitality looks like," Connery says. "And hopefully when you walk into the House of Brunch, you feel like you're walking into my home and we can relax a little bit and take a load off."
